But just because salad season is upon us doesn’t mean that we have to limit ourselves to bowl after bowl of lettuce, arugula, spinach, and other beds of leafy greens for our salad inclusions to rest atop. Instead, we’re all about taking our summer staple in a fresh new direction by swapping out the leafy green bases for some grain-rich ones. Our favorite? Farro. Aside from the fact that the grain is richer in fiber than most others – which means plenty of benefits for your digestive and cardiovascular health – farro is also super high in protein and chock-full of beneficial vitamins and minerals. Pesto Farro Salad with Roasted Summer Vegetables
While the fact alone that this farro is covered in pesto should be more than enough to have you ready to make it all summer long, here’s one more reason: this isn’t your usual, run-of-the-mill pesto that we’re working with here. Instead, it’s a superseed pesto, which just means that it’s seriously packed with nutrient-rich seeds like hemp seeds and pepitas that make it especially good for you. Combined with roasted tomatoes, summer squash, and zucchini, this dish is one we’d gladly put in our summer salad rotation.

Strawberry and Avocado Farro Salad
A summer salad sans fruit is, in our opinion, a summer salad that is not really living up to its full potential. So, naturally, a farro salad that takes advantage of perfectly-in-season strawberries is one that we consider worthy of adding to our summer salad repertoire. Farro Salad with Roasted Eggplant, Caramelized Onions, and Pine Nuts
It’s not often that we find a recipe that is as easy to make as it is wonderfully tasty, but alas, this eggplant, farro, and mint medley takes the cake (err, salad?). Not only does the roasted eggplant offer a perfectly smooth, silky texture to the salad, but the addition of mint makes for a particularly aromatic and flavorful dish that works well on its own or that you can enjoy alongside some grilled chicken or steak.
